Bulgur and Lentil Salad

This is a very filling salad. A cup can be used as a whole meal or half a cup as a side salad.

Bulgur and Lentil Salad

Wash 1 cup dry lentils. Put in 2 cups of water and simmer for 20 minutes. Drain and put in bowl.

Put 1 cup dry bulgur in a bowl, add 1 cup boiling water. Cover with a plate and let stand 10 - 15 minutes.

Combine bulgur with lentils and add:
1/4 c. olive oil
1/4 c. lemon juice
2 cloves minced garlic
1 t. salt
2 T. dill
1/3 c. red onion
1 bell pepper
1 stalk celery

Just before serving, top with one or more of the following:
1/2 c. feta cheese
1/2 c. olives
1/2 c. walnuts
chopped tomato
