Crock Pot Black Beans and Rice

This bean and rice dish is easy to make and a good source of protein. Chop the veggies at night when the beans start soaking and it will be easy to toss it all in the crock pot in the morning.

Crock Pot Black Beans and Rice

1 pound dry black beans, sorted, rinsed and soaked overnight
1 onion
1 bell pepper
1 bay leaf
1 can diced tomatoes
5 c. water
2 T. olive oil
1 t. salt

Cook 8 to 10 hours on low. Serve over hot rice.
