Slim Chicken Creole

This is a healthy alternative to an old favorite. It's also quick and easy to prepare.

Slim Chicken Creole

4 boneless, skinless chicken breasts cut in 1 inch strips
1 can chopped tomatoes
1 c. low sodium chili sauce
1 green pepper
1/2 c. celery
1/4 onion
1 minced garlic clove
1 t. dry basil
1 t. dry parsley
1/4 t. red pepper
1/4 t. salt

Spray a pan with vegetable spray and cook chicken over medium high heat until no longer pink. Add the rest of the ingredients, lower heat and cook 10 minutes. Serve over rice.
