Potatoes are so good and good for you, this low fat makeover will make this a family favorite. Three potatoes make 6 servings.
Twice Baked Potatoes Makeover
3 large baking potatoes 1/2 c fat free chicken broth 1 c 2% shredded sharp cheddar cheese 1/3 c green onions 1/4 c reduced fat sour cream 1 t Grey Poupon Dijon mustard 1/4 t. paprika
Bake potatoes in 400 degree oven for an hour or until done. Cut in half lenghwise and scoop out potato pulp, leaving a small wall of potato. Beat potato pulp, chicken broth, 1/2 c. cheese, onions, sour cream and mustard with a mixer. Spoon into shells, top with remaining cheese and paprika. Put back in oven for 20 minutes.
