Three Bean Stew

Dry beans are a good source of protein and fiber, but we usually don't get enough in our diet. This is an easy way to enjoy these nutrients.

Three Bean Stew
Soak overnight:
1/2 cup each - dry kidney beans, lima beans and great northern beans. Throw away the soak water. Put the beans in a crock pot.

Saute in a little olive oil:
1 green pepper
1 stalk celery
1 small onion

Put sauteed vegetables in crock pot and add:
2 cans stewed tomatoes
a few drops of hickory smoke flavoring
1/2 t. garlic powder
1 can tomato paste mixed with 4 to 6 cups fresh water

Stir well and cook for 6 to 8 hours.
