Tofu Fettuccini Alfredo

Some people are afraid to try a recipe with tofu because they don't know what it will taste like. Try this low fat, low calorie version of an old favorite and you will be pleasantly surprised.

Tofu Fettuccini Alfredo

2 cups cooked fettuccini

Put in blender while pasta cooks:
12 oz. silken tofu
1 garlic clove, chopped
1/4 c. Parmesan cheese, grated
1/4 c. Romano cheese, grated
1 T. olive oil
2 t. onion powder
salt and pepper

Blend until smooth and pour over cooked, drained pasta. Warm over low heat and serve.
