This is a low fat version of a family favorite.

Heart Healthy Scalloped Potatoes

Layer in a casserole:
4 c. thinly sliced potatoes
1 thinly sliced onion

Heat in a pan and pour over potatoes:
3 T wheat flour
1 T fresh parsley
3 T butter
1 1/2 c skim milk

Bake 1 hour covered in 350 degree oven. Uncover and bake 30 minutes.
