Sweet Potato with Black Beans

Sweet potatoes are among the most nutrious vegetables you can eat. They are also easy to prepare.

Sweet Potato with Black Beans

1 sweet potato per serving
1/2 cup black beans per potato
grated cheese

Bake potato in a 400 degree oven for 45 minutes, until tender. Heat beans. Slice potato lenghwise and salt and pepper. Put warm beans on potato and top with cheese.
