Scalloped Potatoes

A low fat, heart healthy version of an old favorite.

Scalloped Potatoes

Mix together:
1 T. fresh parsley, or 1 t. dry parsley
3 T. flour
salt and pepper

Layer in casserole dish:
4 c. potatoes
1 onion
the flour mixture

Heat slowly so the milk does not curdle:
3 T. butter
1 1/2 c. skim milk

Pour milk and butter over potatoes and bake 1 hour, covered, at 350 degrees. Uncover and bake another 30 minutes.
