Tomato Chickpea Soup

This is perfect weather for soup and what could be better than a warm, comforting soup that's good for you? Cooked tomatoes have more nutrition than raw. Chickpeas have health promoting nutrients. One benefit of chickpeas is to help people who have trouble getting restful sleep.

Tomato Chickpea Soup

1 can chickpeas, rinsed and drained
1 can chopped tomatoes
2 ribs celery
1 onion
1 clove garlic
2 T. olive oil
2 1/2 c. broth
basil
salt and pepper

In a soup pot, cook celery, onions and garlic in oil until soft. Add the rest of the ingredients and cook 10 to 15 minutes.
